East 40 was built in 1973 by Ed & Joan, who are responsible for the design and most of the collectibles you see here today. The antiques, pictures and fireplaces have been collected from travels throughout Europe and the United States. The bar is from an old saloon in Montana, the chandelier is from Spain and the stain glass windows are from the old Methodist church here in Bismarck. In 1979 Caspar and Matina Borggreve purchased the restaurant and Caspar's East 40 continued the fine dining tradition while becoming Bismarck's premier restaurant. Over the course of their ownership Caspar and Matina acquired many antiques adding to the charm and atmosphere. In 2003, Matthew and Kimberly Levine purchased the restaurant and East 40 Chophouse and Tavern was born. The Levine's dedication to continuing a great dining tradition is evident in every aspect of your experience with us. Having worked in premier restaurants throughout the country in Colorado, California, Michigan, Vermont and Minnesota, the Levine's are sure to bring new and exciting offerings to Bismarck. Matt & Kim believe only the finest ingredients and the highest standards of service are what will set East 40 apart time and time again.
